Magdalenas o muffin?

Questi Muffin li ho presi da un blog spagnolo. Non mi sono venuti alti come quelli dell’autrice ma il sapore è sublime così ho deciso di postare subito la ricetta.

Occorrono

  • 375 g di farina
  • 250 g di zucchero
  • 250 g di burro o margarina
  • 4 uova un pizzico di sale
  • 1 bustina di lievito per dolci
  • essenza di cocco e vaniglia Flavourart
  • 1/4 di cucchiaino di bicarbonato
  • 125 ml di liquore a piacere
  • Codette colorate di zucchero a piacere

per la glassa Amalgamare zucchero a velo ed un goccio di acqua

Mi ha colpito molto come l’autrice li abbia eseguiti. Ha messo a cuocere le maddalenas in pirottini di carta collocati a loro volta in stampini di ferro alti. Quindi li ha cotti a una temperatura piuttosto alta per 5 minuti (200°C) poi più bassa (175°C) per i restanti 10 minuti. Devo ancora affinare la tecnica ma la ricetta è ottima e ve la consiglio il blog in questione è Misdeseosmas dulces. Ho appartato lievi modifiche utilizzando il burro al posto della margarina semplicemente perchè non avevo margarina in casa. La prossima volta però, seguirò fedelmente la ricetta. Esecuzione Sbattere con le fruste elettriche il burro a temperatura ambiente con lo zucchero fin tanto che non si otterrà un impasto piuttosto spumoso. Aggiungervi un uovo alla volta; amalgamarlo bene al composto prima di aggiungere il successivo. Una volta incorporate tutte le uova versarvi il liquore, le essenze al cocco e vaniglia e per ultima incorporarvi la farina setacciata assieme al sale, al lievito e un po di bicarbonato di sodio. Io ho lavorato il tutto a mano utilizzato la spatola in silicone Pavoni cercando di incorporare all’interno del composto il più possibile di aria . Quindi ho riempito i pirottini di carta per 3/4 e li ho poi collocati negli altri stampini più alti in ferro prima di porli a cuocere in forno a 200°C per i primi cinque minuti poi a 160°C per i successivi. La temperatura dipende molto dal vostro forno. L’importante è che sia alta all’inizio e più bassa successivamente per permettere al muffin di gonfiarsi e cuocere anche all’interno. Li ho poi glassati e decorati con pagliuzze di zucchero (aiutata dalle manine delle mie bambine) conferendo ai muffin un po di aria carnevalesca.

3 cup flour

2 cup white sugar

2 sticks butter

4 eggs

a pinch of salt

vanilla and coconout essence

1/2 cup liquor to taste

tails coloured sugar to taste

for the icing mix powdered sugar and same drops of waterI was very impressed how the author has made them. He put to cook in the maddalenas paper cups placed in turn into molds of iron levels. Then cooked in them has a rather high temperature for 5 minutes (425 F) then the lower (325F) for the remaining 10 minutes. I have yet to refine the technique but the recipe is excellent and I recommend it the blog in question is Misdeseosmas dulces. I secluded slight modifications using butter instead of margarine, shortening, simply because I had no home. Next time, however, follow the recipe faithfully. Execution Beat with electric whips the room temperature butter with sugar as long as you get a dough rather fluffy. Add one egg at a time, mix it well into the mixture before adding the next. Once all the eggs incorporated pour the liqueur, coconut and vanilla essences and lastly incorporate the flour sifted with salt, yeast and a bit of baking soda. I worked on it all by hand using a spatula silicone Pavoni trying to incorporate the compound into the air as possible. So I filled the paper cups to 3/4 and I then placed in other higher iron molds before putting them to bake in the oven at 425 F for the first five minutes then at 325 F for the next. The temperature greatly depends on your oven. The important thing is that both high at the beginning and lower thereafter to allow the muffins to inflate and cook the inside. I then iced and decorated with spangles of sugar (aided by the hands of my daughters) giving the muffin a bit of air carnival.
